 A recipe from the cookbook for New Year!

 

Chocolate Cranberry Cheesecake

8 medium slices or 16 small slivers 

This is an easy dessert that can be made entirely in the microwave. Feel free to make it the day before, cover and refrigerate.  If you have guests who are big dessert eaters, go ahead and make two cheesecakes. 

2 Tbsp. margarine, melted in 9 inch pie plate

1 cup chocolate graham crackers, crushed

1/2 cup dried cranberries, such as Craisins

2-(8 ounce) cream cheese, softened

2/3 cup sugar

2 eggs

2 tsp. lemon juice

1 tsp. vanilla extract

1/2 tsp almond or brandy extract

3 ounces semisweet chocolate, cut in small pieces 

Press the crushed graham crackers into the melted butter pie plate on the bottom and up the sides. Make sure all the graham crackers are coated. Microwave for one minute on 100% power, rotate and microwave for one more minute. Set aside. Take the cranberries and place them in a plastic cup and cover with water.  Microwave on 100% power for one minute and set aside (do not drain). Combine cream cheese and sugar using an electric mixer. Add eggs one at a time, lemon juice, vanilla and almond or brandy. Drain the cranberries and pat dry with a towel. Fold gently into cream cheese mixture the chocolate pieces and cranberries. Pour into graham cracker crust. Microwave on 70% power for 10 minutes, turning halfway or until center jiggles just slightly. Cool and refrigerate.
